Garden Beats 2019 - Food For thought

Garden Beats is the perfect opportunity to have a picnic with the tribe. Nestled amidst the greenery of Fort Canning Park, check out a few things you can do and what to bring!

We have finally moved from our former hotspot Fort Gate to host Garden Beats Festival at Fort Green in 2019 - double the size, double the fun! There’s plenty of space to have a picnic against the picturesque Fort Canning Park.

The Instagram-worthy venue is the best place to relax and enjoy some fresh air away from the hustle and bustle of work.

Garden Beats is proud to be the first carbon-neutral music festival in Singapore and hopes to commit to eco-friendly solutions one step at a time.

This year, our goal is to move towards becoming a completely zero-plastic festival. If you are not sure about where to start, fret not - take a step into the conscious circle, where eco workshops & talks are held, to learn more.

Not sure what to bring? Here’s a short rundown of 5 must-haves on your checklist:

  1. Water Bottle - Stay hydrated & reduce plastic waste by refilling your bottles at designated water points.

  2. Picnic Mat - Lay out the mat and enjoy some sun!

  3. Camera - Capture those precious moments

  4. Shades - Protect your eyes from the sunny glare!

  5. Poncho - Leave those sharp umbrellas at home & opt for ponchos instead

What You Need -

  • 85g wholewheat penne

  • 1 tbsp rapeseed oil

  • 1 large red pepper, roughly chopped

  • 2 frozen, skinless wild salmon fillets (about 120g each)

  • 1 lemon, zested and juiced

  • 2 garlic cloves, finely grated

  • 1 shallot, very finely chopped

  • 2 tbsp capers

  • 6 pitted Kalamata olives, sliced

  • 1 tsp extra virgin olive oil

  • 2 handfuls rocket

Cooking Method -

  1. Cook the pasta following pack instructions. Meanwhile, heat the rapeseed oil in a frying pan, add the pepper, cover and leave for about 5 mins until it softens and starts to char a little. Stir, then push the pepper to one side and add the salmon. Cover and fry for 8-10 mins until just cooked.

  2. Meanwhile, mix the lemon zest and juice in a large bowl with the garlic, shallot, capers and olives.

  3. Add the cooked pepper and salmon to the bowl. Drain the pasta and add it too, with black pepper and the olive oil. Toss everything together, flaking the salmon as you do so. If eating now, toss through the rocket; if packing a lunch, leave to cool, then put in a container with the rocket on top and mix through just before eating.
